Busy, cold Monday

Winter is here and we will be seeing snow very soon.  I am sitting here tired, pooped. If i was a smart mother , i would probably have been in bed say about an hour nad a half ago, but am sitting here catching up on my blog.

Today it was a busy day at work, that made time go a little fast i guess.  I am still taking Cardio at work too, so am starting to tone up a bit. The numbers on the scale have been fluctuating, given thanksgiving was not too long ago, plus i love to cook, lol

Julian and Eli are doing great. Julian is trying to read and Eli is trying to roll over the place and trying to pull himself forward in a craling position, though we are not there yet. He is exactly 6 months today!  He has been sleeping since i got home, so this is pretty new. Normally he would have already woken up a couple of times already.

I am fighting to keep my eyes open, so i am going to join the rest of the family and just call it a night.

I know the Title is long, but that was my bread # 2. My bread # 1 was a simple Cinnamon Raisin bread that i baked on Saturday. I tweaked that original Recipe by adding Honey and Coconut to my second bread  and oh my , it was De-li-ci-ous!

This  Recipe came with my Breadman.  So here’s  what i did:

Honey Coconut Cinammon Raisin Bread

I baked a 2 lb size loaf, Medium crust

1 1/4 cups + 2 Tbsp  of water

2 Tbsp of canola oil

2 Tbsp Brown sugar, firmly packed

1/4 Cup of Honey ( I have a sweet tooth, so i added this)

2 tsp salt

2 Tbsp Soy milk

1Tbsp Cinnamon

4 Cups of All Purpose Flour

1/2 Cup of Grated Coconut

2 1/4 tsp Active dry Yeast

2/3 Cup Raisins

The Rest my Breadman did for me. It kneaded the dough, the dough rose 3 times and 3 1/2hrs later the bread was ready. I immediately put it into a large Ziploc  bag to capture the moisture, so it didn’t dry out.

And i must admit, I have a happy husband and 3 1/2 year old son who can’t get enough of this bread. When you slice it and add some smart Balance light butter, mmmh mmmh You will definitely forget that this is completely, dairy free, egg free and nut free! Absolutely Home Made!
